Ananda Spa Whole Wheat Spaghetti with Bolognese

This whole dinner entree is courtesy of Ananda Spa in the Himalayas. The executive Chef, Narenda Sharma, carefully creates recipes for guests which feature wholesome ingredients like whole grains, locally sourced vegetables and hand picked herbs and spices.  In this recipe for Whole Wheat Spaghetti and Soya Bolognese, he uses soya nuggets, a meat substitute and savory vegetables to create a rich and savory tomato sauce.

Ananda Spa Whole Wheat Spaghetti with Soya Bolognese
Recipes: Entrees, Vegan
For the Soya Nugget Bolognese
  • 120 grams soaked and chopped soya nuggets
  • 10 grams chopped onions
  • 5 grams chopped garlic
  • 5 grams chopped leeks
  • 5 grams chopped celery
  • 10 grams chopped carrot
  • 20 ml red wine
  • 2 grams bay leaf
  • 1 no. cinnamon stick
  • 10 grams tomato puree
  • 05 milliliters Olive oil
For the Spaghetti
  • 60 grams Whole wheat spaghetti
  • 02 grams Parsley
  • 30 grams Tomato concasse
  • 15 grams Parmesan cheese
  • 02 grams Salt
For Soya Bolognese Sauce
  1. Heat oil in a thick bottom pan, add oil, onion, garlic and sauté for a while, and add bay leaf and cinnamon stick in it.
  2. Now add chopped soy nugget and cook it till it dries a bit.
  3. Add leeks, celery and carrot and again cook for a while.
  4. Now add little of flour to give it a shine and cook for a while.
  5. Add tomato puree, vegetable stock and let it cook at a slow flame.
  6. Check for doneness and let it cool.
For the Spaghetti
  1. Blanch pasta and keep it aside.
  2. Heat olive oil, add onion, garlic, sauté it
  3. Now add red wine and deglaze it,
  4. Add Soya Bolognese, tomato concasse and little of stock
  5. Adjust seasoning.
  6. Then add pasta, toss to coat, and serve with basil leaves.
Tomato concasse is a tomato that has been peeled, seeded (seeds and skins removed), and chopped to to a rough dice. Not into soya meat substitutes? Try it with ground turkey.
