Skyterra's nut crusted chicken breast is a healthier alternative to breaded and fried chicken -- it's naturally gluten-free and dairy-free and has a satisfying crunch.

Ingredients

  • 2 whole eggs - beaten
  • 2 lbs chicken breasts or tenderloins - boneless, skinless, and pounded - OR -
  • 4 each chicken thighs - boneless, skinless, and pounded - OR -
  • 4 each salmon fillets
  • 1/2 cup pistachios - chopped
  • 1/2 cup walnuts - chopped
  • 1/2 cup pecans - chopped
  • 1/4 cup olive oil
  • 3-4 pinches salt - course

Instructions

  • Prepare a baking sheet by lining it with parchment paper and coating the paper with olive oil.
  • Chop the nuts finely, or pulse in a food processor.
  • Beat the egg thorougly and add to a shallow bowl.
  • If using chicken, pound the chicken breasts, tenderloins, or thighs -- your protein choice. To flatten, place chicken on a cutting board, cover with plastic wrap, and use the flat side of a meat mallet to evenly pound each piece to 1/4 inch thick.
  • Dip each piece of chicken or fish in the whisked egg, followed by the nut mixture. Coat well. Continue until all chicken pieces or fish are coated.
  • Arrange nut crusted chicken or fish on baking sheet. Season with a pinch of salt on each serving.
  • Bake in an oven at 350 degrees for 20 minutes or until internal temp reaches 165. Serve immediately.
