Mini Meat Loaf Muffins

Mini Meatloaf Muffins tick off a lot of boxes. They are a good protein source, they appeal to all members of the family, portion control is built in, they taste just as good the next day, they pack well, they make great sandwiches,  and you can customize them so that some family members who don’t like onions can have without, some can have with, and so on.  A winner.

This recipe for Mini Meat Loaves was submitted by a reader for our post-wls bariatric-friendly recipe collection.

Ingredients

  • 2 pounds extra lean ground beef
  • 1 envelope reduced sodium dry onion soup mix
  • 3/4 cup plain dry bread crumbs
  • 2 whole eggs or try Egg Beaters
  • 3/4 cup water
  • 1/3 cup reduced sugar ketchup

Instructions

  • Preheat oven to 350 degrees.
  • In large bowl combine all ingredients, mixing well.
  • Spray muffin tins with no-stick spray.
  • Fill muffin cups with 1/3 cup of meatloaf mixture.
  • Press lightly to smooth the tops.
  • Bake uncovered for 40 minutes.
  • Makes 18 to 20 mini meat loaves, which freeze beautifully.

    One of the WORST frozen food items at Trader Joe’s were the Meatloaf Muffins, and they didn’t last long on the shelves I don’t think (meaning they pulled it). It was the first time I ever returned a product to the store and said “these are awful.” I know they had a good return policy but I’m not a food-returner, and with those, I was.

    So, I’ve been reluctant to make mini-meatloaves, but this recipe was pretty deadbang simple, so I gave it a whirl, but I used the TJ’s concept, but better food!

    I made the mini meatloaves, and, used TJ’s frozen mashed potato nuggets and in the microwave, made the potatoes. When the meatloaves were done, I dabbed the tops with a paper napkin to remove a little bit of fat, and spread on the ketchup, and then a big dollop of mashed potatoes on each one, with a little sprinkle of Parmesan on each one, and baked them again until the potatoes browned a bit on top.

    My family really liked them.

    These were nice as they are — a plain and simple meatloaf, but the second time we made them, we used Mexican seasonings for “Taco Meatloaf”, and used salsa in place of the ketchup, and those were a big hit with the young ones in the family.

      Tried this tip and the taco mini meat loaf muffins were a huge hit. Plus a bonus — leftovers chopped up in a tortilla or pita make mini burritos.
