Seafood Reuben Sandwich – Hilton Head Health

At this South Carolina weight loss spa, guests enjoy a meal plan with delicious flavors and realistic portions.  The Chef and Culinary Team have created a low-calorie, healthy gourmet cuisine with an emphasis on local and natural ingredients to ensure a well-balanced weight loss diet.   One of the popular recipes served is this savory sandwich – SEAFOOD REUBEN SANDWICH on whole grain buns (or sourdough toast as you prefer), which replaces the traditional and high fat cured meats with high protein and low-fat flaky white fish fillets.

This recipe, with an option for homemade whole grain buns and a side dish of Citrus Green Beans, was featured on the Hallmark Channel’s Home & Family channel, prepared by Hilton Head’s own Executive Chef, Karla Williams.

SEAFOOD REUBEN WITH CITRUS GREEN BEANS

Executive chef of Hilton Head Health, Karla Williams offers up this mouth-watering warm sandwich with fresh fish, tangy slaw, and Thousand Island Dressing.

Ingredients

Hilton Head 1,000 Island Dressing

  • cup Tomato paste
  • ½ cup reduced fat mayonnaise
  • cup relish
  • 1 teaspoon horseradish
  • cup Skim milk

Grilled Fresh Catch

  • ¼ teaspoon Olive oil
  • teaspoon Salt
  • teaspoon Fresh Ground Black Pepper
  • 3 ounces Flaky White Fish (per person)

Hilton Head Coleslaw

  • 1 ¾ cups shredded cabbage
  • 3 tablespoons reduced fat mayonnaise
  • 2 tablespoons Apple cider vinegar
  • ½ teaspoon Dijon mustard
  • ¼ teaspoon Celery seeds
  • ¼ teaspoon Paprika
  • 1 teaspoon Agave Nectar (or honey)
  • ¼ teaspoon Fresh Ground Black Pepper

Citrus Vinaigrette Green Beans

  • 1 lb Fresh Green Beans
  • ¼ cup White balsamic vinegar
  • ½ cup Fresh Lemon Juice
  • ½ cup Fresh Lime Juice
  • ½ cup Dijon mustard
  • 2 Tablespoons Lemon zest
  • 2 Tablespoons Lime zest
  • 2 Tablespoons Orange zest
  • ¼ teaspoon Fresh Ground Black Pepper
  • ¼ cup Olive oil

Instructions

Directions for 1,000 Island Dressing

  • Combine all ingredients.  Set aside and chill.

Directions for Fish

  • Pre-heat grill on high.
  • Spray with non-stick cooking spray.
  • Season each fillet with salt and pepper.
  • Lay filet on grill and grill 3-5 minutes, or until a white ring forms at the bottom of the protein and the protein easily comes off of the grill.
  • Flip and repeat cooking on the other side. 

Directions for Coleslaw

  • In a mixing bowl combine all dressing ingredients.
  • Prep cabbage.
  • Mix 1/4 cup of shredded cabbage with 1 tablespoon of dressing.

To Compose Sandwich

  • Preheat oven to 425 degrees.
  • Spread prepared thousand Island dressing on bottom half of bun or on one slice of toasted bread per sandwich.
  • Place grilled catch on top of Thousand Island dressing.
  • Add 1/4 ounce Swiss cheese.
  • Add 1/4 cup coleslaw
  • Warm in oven 2-3 minutes.
  • Serve warm.

Directions for Citrus Vinaigrette Green Beans

  • Steam or lightly sautee green beans. Set aside.
  • Place all remaining ingredients except olive oil, in a blender.
  • While mixture is blending, slowly add the oil through the top until emulsified.
  • Toss Citrus Dressing with Green Beans. Serve immediately with the sandwich.

    Agree it’s all great, but you know … since the sandwich is warm, I just served it with Chilled Snap Peas, instead of warm green beans. Saves the step of the dressing and cooking of the beans, and the snap peas were crisp and fresh and green, like “chips” — crunchy and sweet.

    Every bit of this is good. The sandwich is good. The slaw is good. The dressing is good. Combine them all for this great sandwich, or, use the elements for a variety of lunch recipes and salads. Really, really good!
