Heart Healthy Chicken Fruit Salad

This Heart Healthy Chicken Fruit Salad by Cardiology Associates is full of chunky chicken, tasty pineapple, sweet grapes, and a low fat dressing.  Serve at your spa party, or, take it to  work for lunch with low fat crackers or pita bread.

  • 3 cups diced, cooked chicken breast
  • 8 oz. unsweetened pineapple chunks, drained
  • 1/4 cup minced onion
  • 1/3 cup reduced-calorie or fat-free mayonnaise
  • 1 cup seedless grapes
  • ½ teaspoons ground coriander
  • 1 cup diced celery
  • 2 tablespoons lemon juice
  • 1/4 teaspoons fresh ground pepper
  1. Gently combine and toss all ingredients.
  2. Serve on Lettuce Leaves, or, an English Muffin, Sourdough Bread, a Tomato, a Cantaloupe or Pineapple Half.
