Vermont Maple Sweet Potatoes

Vermont Maple Sweet Potatoes

Vermont Maple Sweet Potatoes spotlight wonderful ingredients from Vermont, but can easily be made wherever you are from, as well.  Great for holidays, side dishes, and any time.

Ingredients

  • 2 pounds sweet potatoes or yams peeled and sliced into wedges or large cubes
  • 1 cup unsweetened apple juice
  • 1/4 cup Vermont maple syrup
  • 1 teaspoon fresh ginger grated
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon tamari
  • Scant Course Ground Pepper

Instructions

  • Preheat oven to 350 degrees.
  • Place large cubes or wedges of sweet potatoes in 8 cups boiling water and simmer for 5 minutes to begin to soften.
  • In a large baking dish, stir together juice, syrup, ginger, spices and tamari.
  • Drain potatoes and add to the baking dish, coating evenly with the juicy marinade.
  • Bake uncovered for 1 hour, stirring every 15 minutes until potatoes are tender, and juice has thickened, and bits have caramelized.  Dust with course ground pepper.
