Pritikin Mango Compote

This may be a touch decision to make — will you enjoy this Mango Compote for breakfast over oatmeal, pancakes, crepes or toast, or, will you serve it at lunch with cottage cheese? Or will you save it for dessert?  It’s delicious on its own, over rice pudding, frozen yogurt, and a host of other treats for breakfast, lunch or dessert. Make your morning hot cereal anything but ordinary by topping it with this zesty, subtly sweet Mango Compote. It's also a superb dessert. No added sugar, no added fat, but loads of luscious flavor.

Ingredients

Compote

  • 3 whole mangoes - peeled and medium-diced or thinly sliced
  • 1 pinch cinnamon
  • 2 tablespoons apple juice concentrate - unsweetened, undiluted
  • 2 tablespoons white wine
  • 1 teaspoon vanilla bean paste - or vanilla extract
  • 1 pinch nutmeg - fresh ground
  • 1-2 pinches cayenne pepper - for a spicy version

Optional Garnishes

  • ½ cup raspberries for garnish
  • 1 recipe creamy vanilla sauce - See Notes

Instructions

  • In a large stockpot add all ingredients. Cook over medium heat for 5-7 minutes, stirring constantly.
  • Cool, portion and serve.

The Chefs at Pritikin serve this compote to guests, cooled, with fresh raspberries, and dotted with creamy vanilla sauce. The sauce is made by combining Vanilla Soymilk (1 cup), Vanilla Extract (1 teaspoon), Fat Free Sour Cream (3/4 cup), and Splenda (1 tablespoon), mixed until creamy, and chilled until serving.
