Pritikin Strawberry Asparagus Salad

It’s asparagus season! Pritikin has several recipes for gorgeous and delicious vegetable. Get your asparagus now, in spring and early summer, when it’s at its peak in flavor, vitamins, and antioxidants, and its least expensive.  This Pritikin Asparagus Strawberry Salad is proof positive that healthy food can be as enticing to the palate as junky treats.  The Pritikin Eating Plan recommends you eat at least 5 (and preferably many more!) servings of vegetables each day.  Not only are they nutritious, you’ll just naturally eat fewer calories and shed excess weight. This healthy salad recipe is both vegetable and fruit rich.

Be creative! Feel free to forge new fusions. Do you prefer balsamic over red wine vinegar? Go for it! Did you just pick up some juicy blackberries, peaches, clementines or oranges from the market? Use them instead of strawberries for this salad. Remember Pritikin Chef Anthony’s mantra: "If you like foods individually, chances are you will love them when they’re combined." It’s all about discovering new taste treats!

Ingredients

Salad Base

  • 2 bunches Fresh Asparagus
  • 2 small tomatoes -optional, quartered or sliced
  • 2 small carrots -optional, cleaned and sliced
  • 1 cup strawberries -cleaned and sliced
  • 1 bunch shredded romaine -optional -- this salad is delicious without lettuce, too. We also love it with raw spinach leaves.
  • 4 pinches fresh herbs or microgreens

Dressing

  • ½ cup red wine vinegar
  • ½ cup orange juice
  • 1 tablespoon garlic fresh minced
  • 1 teaspoon paprika
  • 1 teaspoon black pepper fresh ground

Instructions

  • For dressing, combine all dressing ingredients and whisk.
  • Remove tough asparagus ends, cut on the diagonal into 1-inch pieces, and blanch. Put asparagus, tomatoes or carrots, strawberries or other fruit, and romaine in large bowl. Toss gently with dressing, top with a pinch of microgreens for each serving, and serve.
