Pritikin Low Fat Lush Berry Pie

Well, that burger has roughly the same amount of artery-clogging saturated fats as regular slice of cherry or berry pie from a bakery.   Try this beautiful and tangy Pritikin Lush Berry Pie instead, and enjoy zero saturated fat but lots of lip-smacking flavor.

Try this beautiful and tangy Pritikin Lush Berry Pie and enjoy zero saturated fat but lots of lip-smacking flavor.

Ingredients

  • 2 cups corn flakes , no sugar, no salt added*
  • 4 cups frozen mixed berries , no sugar added, thawed
  • 2 tablespoons frozen apple juice concentrate thawed , undiluted
  • 1 tablespoon fresh lemon juice
  • 3 tablespoons cornstarch , dissolved into 6 tablespoons water
  • 1 tablespoon pure vanilla extract

Instructions

  • Preheat oven to 350 degrees.
  • In food processor, grind corn flakes until they are the size of peppercorns.
  • Lightly spray bottom of pie baking pan (8 inches in diameter) with Pam. To make crust, press corn flakes into bottom of pan.
  • In a large bowl, combine remaining ingredients.
  • Fill pie pan with cherry mixture, and bake in oven at 350 degrees for 30 minutes.
  • Cool to serve with a Fat Free topping, or, serve warm

    Is Pritikin just relying on the juices of the pie to bind that crust? Because the crust has no fat. It’s just crushed cornflakes?

      Thanks for asking! Yes, this is intentionally a no-fat added recipe. Depending on your calorie budget and your personal eating plan, you may wish to add a wee bit of a binder, such as coconut oil, butter, or margarine, but just a tiny amount until the flakes hold together a bit. Or, keep the fat calories low and just add these cornflake crumbs to the bottom of individual ramekins, and then top with the berry mixture. The pies still bake, but cutting the “crust” won’t be an issue with your mini berry pies.

        Thank you for making so many Pritikin recipes available. That’s a real good idea but I’m still gonna add a bit of butter so I can slice it more easily next time.

    this wasn’t terrible, wasn’t great, and won’t be a repeat for us … i don’t think it’s possible to make a great pie and a low calorie pie … you can choose one or the other
