Ingredients

baby spinach leaves
▢

cup
cherry tomatoes
- or grape tomatoes - cut in half
▢
1
cup
onion
- sliced thin
▢
3
teaspoons
olive oil
▢
2
cloves
garlic
- chopped
▢
¼
cup
water
▢
salt and pepper
- to taste
Instructions
Preheat oven to 400° F
In a small bowl add cherry tomatoes, 2 teaspoons olive oil, and a pinch of salt and pepper. Cook for 20 minutes until tomatoes are tender.
In a skillet, saute 1 teaspoon olive oil, onion, and garlic, until tender.
Stir in spinach to skillet, cover, and cook over medium heat for 3 minutes until spinach is wilted and soft.
Add roasted tomatoes to skillet of spinach, combine well, and serve immediately.
