Ingredients

  • 1/4 cup Honey
  • 1/2 cup Peanut butter
  • 1 tablespoon Coconut oil
  • 1 teaspoon Vanilla extract
  • 1 scoop Vanilla whey protein powder -- at Spa Index, our favorite brand is Unjury
  • 1 cup Old fashion oats -- avoid instant
  • 1 cup Pretzels
  • 1 cup Almonds
  • 1/2 cup Raisins -- or cranberries if you prefer
  • 1/2 cup Coconut - shredded, unsweetened

Instructions

  • Lightly spray a 9 x 13 baking dish with non-stick spray.
  • In a small sauce pot combine honey, peanut butter, coconut oil, and vanilla extract. Heat on medium-low heat until the mixture is melted together, stir occasionally to avoid burning.
  • In a food processor pulse the almonds and pretzels until the mixture is even in size.
  • In a large bowl combine; almond mixture, oats, protein powder, raisins and coconut, pour in melted peanut butter mixture. Mix until evenly combined.
  • Pour mixture into the baking dish and let cool.
  • The granola will firm up best in the refrigerator.
  • Let cool, and cut into 16 bars.
