Fruity Spa Popsicles

Trisha Shirey, the Director of Flora and Fauna at Lake Austin Spa Resort in Texas for the past 29 years, often turns to the resort’s award-winning organic gardens for inspiration as she spends much of her time caring for the vast amounts of herbs, vegetables, fruit trees and flowers that grow along the shores of the 19-acre lakeside retreat in the Texas Hill Country.

Taking her cue from nature, Shirey has perfected a few recipes for healthy spa Popsicles to include her favorite summertime ingredients of fresh herbs, yogurt, fruit, coffee and avocados.

They are simple to make and free of high fructose corn syrup, artificial flavors and dyes that are typically found in store bought varieties.

Lake Austin Spa has perfected these recipes for healthy spa Popsicles to include summertime ingredients of fresh herbs, yogurt, fruit, coffee and avocados.

Ingredients

Watermelon Berry

  • 2 cups seeded watermelon , cut into chunks
  • ½ cup fresh or frozen strawberries
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons rapadura (unrefined cane) sugar , honey or agave nectar (or to taste)
  • Peppermint or cinnamon basil sprigs

Coffee Pops

  • 1 cup strong coffee
  • 2 tablespoons Agave Nectar (or honey)
  • 1 cup light milk or light cream or almond milk 1% or 2%

Avocado Mint

  • 1 large Avocado very ripe, cut into chunks
  • 1/2 cup light cream (half and half)
  • 1/4 cup light milk or almond milk 1% or 2%
  • 2 srigs Fresh mint leaves
  • 2 tablespoons Agave Nectar (or honey)

Pina Colada Pops

  • 1 cup crushed pineapple in its own juice
  • 1 cup low fat coconut milk
  • 2 tablespoons Agave Nectar (or honey)
  • 2 tablespoons coconut shreds unsweetened
  • 2 sprigs Fresh mint leaves

Mango Lemon

  • 1 cup orange juice (or pineapple)
  • 1 sprig lemon balm or lemon verbena

Instructions

  • Place all ingredients in the blender and blend until smooth.
  • Pour into molds and freeze at least 6 hours (but preferably overnight).
  • Serve and enjoy!
