Avocado Cucumber Gazpacho is the perfect chilled soup perfect for a warm weather lunch.

The Ranch at Live Oak Malibu assists guests in re-calibrating their mind, body and spirit through an intensive week long endurance, wellness and nutrition program. Located three miles above the Pacific Ocean in the Santa Monica Mountains, the 15-cottage retreat is beautifully situated on a large working ranch.    The open-air kitchen at The Ranch makes meal time a communal experience. A light and refreshing soup served chilled -- perfect for a warm weather lunch

Equipment

  • Blender

Ingredients

  • 2 whole cucumbers - peeled and chopped
  • 1 whole avocado - pitted
  • 1/4 cup cilantro or basil - chopped
  • 1 clove garlic
  • 1 whole scallion - chopped
  • 1 whole lime - juiced, juice reserved
  • 1 Tbsp rice vinegar
  • 1 cup water
  • Salt & pepper to taste
  • Optional Garnishes:
  • Cherry tomatoes diced
  • Watermelon diced
  • Toasted Sunflower Seeds

Instructions

  • Puree all of the ingredients in a high-powered blender until completely smooth and creamy.
  • Season to taste with salt & pepper.
  • Keep refrigerated until ready to serve.
  • Garnish as desired.
