Cheery Coco Chia Parfait

This recipe for Cheery Coco Chia Parfait, contributed by Leisa Cockayne of Make Me Sugar Free, is recommended as a healthy sugar-free dessert.  This little pot of tasty goodness consists of chia seeds soaked over night in coconut water with a splash of rose water.  It’s topped with coconut cream whipped together with Greek yogurt and topped with cashews and desiccated coconut.

This little pot of tasty goodness consists of chia seeds soaked over night in coconut water with a splash of rose water. It's topped with coconut cream whipped together with Greek yogurt and topped with cashews and desiccated coconut.

Ingredients

  • ½ cup chia seeds
  • ½ cup coconut water
  • small tin of coconut cream
  • 4 Tablespoons plain non-fat Greek yogurt
  • 2 dashes desiccated coconut
  • handful of cashew nuts
  • 1 teaspoon Rosewater

Instructions

  • Blend the chia seeds, coconut water and rose water, and divide into two serving dishes.
  • Soak overnight in the fridge.
  • To serve, whisk together coconut cream and Greek yogurt.
  • Top the soaked chia seeds with the coconut cream and yogurt and sprinkle with cashews and a few dashes of desiccated coconut.
