Ananda Spa Seeded Granola Bars

These guest favorite Granola Bars are courtesy of Ananda Spa in the Himalayas. The executive Chef, Narenda Sharma, carefully creates recipes for guests which feature wholesome ingredients, like oats, coconut flour and seeds.  In this recipe, he uses a popular powdered sugar substitute called Natura which is a sucralose product.  In the USA, you can use Splenda, or Swerve, or coconut sugar crystals to taste.

Ingredients

Original Recipe (Commercial Size)

  • 500 Grams unsalted butter
  • 250 Grams Confectioners Sugar
  • 1000 Grams rolled oats
  • 400 Grams coconut flour
  • 300 Grams sesame seeds
  • 50 Grams sunflower seeds

Smaller Size, Converted Ingredients (Provided by Ananda)

  • 2 sticks unsalted butter
  • 1 cups powdered sugar (try Swerve)
  • 2 cups rolled oats
  • 1 cup coconut flour
  • ½ cup sesame seeds
  • cup sunflower seeds

Instructions

  • Melt the butter with powdered sugar substitute in a sauce pan
  • Mix all other ingredients together and fold it with melted butter and sugar substitute
  • Spray a baking tray with pan spray
  • Spread the mixture into the baking tray and bake at 160 degrees for 15 mins

Spa Index Kitchen Notes

This recipe is calculated as if you used regular Confectioners Sugar, but the original called for a no-calorie sugar substitute. Try coconut sugar crystals or other natural sweetener to taste.  We used Swerve no calorie confectioners sugar. 
The final calorie will vary by what you used as a sugar substitute -- by quite alot.  This is still a high fat recipe, developed for its nutrition rather than its calories.
The amounts were confusing so the Himalayan Kitchen staff provided the breakdown for us.  In addition to the standard nutrients provided, we can add:  Vitamin B1, 28% DV, B2 7%, B3 7%, E 13%, Omega 3 12%, Omega 6 22%, Magnesium 28%, Copper 36%, Phosphorus 30% Manganese 82%.
