This tasty salad recipe by New Life Hiking Spa in Vermont uses fresh crisp cucumbers, cabbage, papaya and a tangy Greek yogurt and poppy seed dressing.

Ingredients

Salad Ingredients

  • 2 medium cucumbers , peeled or un-peeled, de-seeded, and julienned
  • 2 cups green cabbage , shredded angel hair style
  • 1 whole papaya , seeded and diced or cubed

Dressing Ingredients

  • ½ cup plain non-fat Greek yogurt
  • 1 medium lemon , zested and juiced
  • 1 tablespoon poppy seeds
  • 1 teaspoon Dijon mustard
  • 1 tablespoon chopped fresh parsley
  • 1 clove garlic finely minced
  • 2-3 turns coarse ground pepper , to taste

Instructions

  • Combine dressing ingredients, and chill until ready to serve
  • Place all veggie and fruit ingredients in a bowl, mix with a bit of dressing, and let marinade for up to 30 minutes
  • Serve salad with additional dressing at the table
