Pritikin Maple Butterscotch Pudding

This Maple Butterscotch Pudding dessert is a delicious treat.  Pudding is usually a fatty and sugar laden treat, but the with this low-fat Pritikin recipe, you can not only indulge your sweet tooth guilt-free, but you’ll benefit from the nutrients of a super food — sweet potatoes — at the same time.

Butterscotch Pudding is a delicious treat, but one usually full of unhealthy ingredients. Indulge your sweet tooth with this fan favorite, and without the guilt. Try the Maple Cream topping for a bit of added luxury.

Ingredients

Pudding

  • 2 medium sweet potatoes
  • 4 ounces cream cheese - reduced calorie or fat free
  • ½ cup pure maple syrup - avoid pancake syrup
  • 1 cup Greek yogurt - fat-free plain
  • 1 teaspoon vanilla extract
  • ½ whole lemon - juiced

Maple Cream Topping (optional)

  • 8 ounces cream cheese - reduced calorie or fat-free
  • 2 cup sour cream - fat free
  • ¾ cup maple syrup - do not use pancake syrup
  • 1 teaspoon vanilla extract

Instructions

  • Preheat oven to 400F

Pudding

  • Wash sweet potatoes and wrap with foil while still wet
    2 medium sweet potatoes
  • Roast at 400F for at least one hour or until potatoes are soft and begin to caramelize
  • Cool potatoes completely and peel and discard skin
  • Combine the potatoes and remaining ingredients in a blender and puree until smooth
    4 ounces cream cheese, 1/2 cup pure maple syrup, 1 cup Greek yogurt, 1 teaspoon vanilla extract, 1/2 whole lemon
  • Immediately chill for several hours to thicken the pudding
  • Top with Maple Cream, if desired

Maple Cream (Optional)

  • Blend all ingredients in food processor until smooth.
    8 ounces cream cheese, 2 cup sour cream, 3/4 cup maple syrup, 1 teaspoon vanilla extract
  • Chill until serving.

Pritikin serves a Maple Cream topping as an option.    Allow a tablespoon or so per serving, or use it to top toast, hot or cold cereals, or your favorite desserts or fruit snacks.
We divided the Maple Cream Topping into 10 servings (which is more than a tablespoon, actually) and the result is approximately 125-135 calories per serving, so use just a bit or a lot, as you prefer.
