Quinoa Fruit Salad with Herb Dressing

Make the most of sweet summery fruit, berries and herbs with a light Quinoa Fruit Salad with an herb dressing.  This recipe is delicious swapping with any of your favorite fruits and herbs. If you don’t have agave (for the dressing), try maple syrup or honey.

Make the most of sweet summery fruit, berries and herbs with a light Quinoa Fruit Salad with an herb dressing.

Ingredients

QUINOA

  • ½ cup quinoa
  • 1 cup water

FRUIT SALAD

  • 2 cups mixed fruit - berries, melon and mango

HERB DRESSING

  • 2 teaspoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon agave nectar - or maple syrup, or honey
  • 10 leaves fresh basil
  • salt and pepper - to taste

Instructions

  • Boil water in a medium skillet and add quinoa. Turn heat down to medium, cover skillet and let simmer for 10-12 minutes until cooked.
  • Cool the quinoa by setting aside.
  • Clean and prepared your mixed fruit by cutting large pieces into bite-size, removing stems and leaves from berries, and slicing berries.
  • Whisk together all of the dressing ingredients, except the basil.
  • When the quinoa has fully cooled, combine basil leaves and dressing, and mix half of this dressing into the cooked quinoa. Then, add the prepared fruits.
  • Served the fruit salad with reserved dressing on the side, to adjust to taste.
