Miraval Mai Tai Sorbet

This tart, sweet and tropical Mai Tai Sorbet was created at Miraval Resort in Arizona.   It has Dark Rum in it, but you can omit this and still have a very refreshing dessert.

Cool off and relax this summer with our refreshing and delicious Mai Tai Sorbet!

Ingredients

  • ¼ cup Splenda Sugar Blend (or granulated sugar)
  • ¼ cup water
  • ¼ cup pineapple juice no added sugar
  • ¼ cup passion fruit puree
  • ¼ cup orange juice
  • ½ cup guava nectar
  • 6 Tbsp. dark rum optional
  • 1 Tbsp. lime juice
  • 4 tsp. grenadine

Instructions

  • In a large saucepan, make a simple syrup by boiling the sugar and water together for 2 minutes.
  • Take the syrup from the heat and stir in the pineapple juice, passion fruit puree, orange juice, guava nectar, rum (if using), lime juice, and grenadine. Chill the mixture if it’s still slightly warm.
  • Once cool,  then freeze in an ice-cream maker according to the manufacturer’s instructions.  At least 90 minutes in a freezer container is also ideal.

Spa Index Kitchen Notes

Each serving is 1/2 cup.
We did calculate a full 9 tablespoons of rum for these numbers, but do read our comment, below, for our tip on flavoring with rum, for only a scant number of calories.
The rum accounts for about 49 calories per serving (193 calories for 6 tablespoons of 80 proof rum) for this recipe, so you'll save that amount by eliminating it, and, spritzing with just a light mist of rum, instead.  That brings a scoop down to 123 calories (assuming you use reduced sugar substitute, as we did).

Served in a martini glass at a party. We used the tip to “spray” rum onto the sorbet for flavor and aroma. Worked great.

This was super good, but we have learned to add LESS of the boozy elements of recipes because you can always add more (which is true of lots of things, like sugar). Dark Rum has a lot of flavor, so, thanks anyway Miraval for the “heavy pour” but we just used 6 teaspoons, instead of 6 tablespoons, and that rum flavor all four servings. Plenty. Brought the calories way down! That’s 192 vs 64 calories for the rum, alone. So this then is what … like 30 calories or (give or take) less calories per serving. :)

Want us to give you even MORE savings? Don’t add the rum at all, and add a bit to a spray bottle, and SPRAY each serving. Believe it not, a heavy mist of Rum over the top of certain recipes (fruit salad, coffee, desserts) is enough to flavor the tip of the tongue and you’ve got alcohol calories in the single digits my friend.
