Pritikin Banana Ginger Parfait

And they’re low in calorie density, so they’re perfect for losing weight. This healthy recipe for Pritikin Banana Ginger Parfait is nutritious, very low calorie and so easy to make.

Is it a simple breakfast, for a simple dessert?  It can be both, depending on which version you prefer of this Banana Ginger Parfait.

Ingredients

Ingredients

  • 3 medium bananas ripe
  • 2 tablespoons apple juice concentrate frozen, no sugar added
  • 1 teaspoon pure vanilla extract
  • 2 cups plain non-fat Greek yogurt
  • 1 piece Fresh Ginger Root
  • ½ cup Splenda Granulated Sweetener
  • 1 pinch orange zest

Instructions

  • Slice skin off ginger root and grate, using a microplane, to extract 1 teaspoon of juice.
  • Mash bananas using a wire whip.
  • Combine bananas, apple juice concentrate, vanilla, yogurt, orange zest and ginger juice in bowl. Mix well.
  • Top with fresh fruit, berries, chia seeds, and other toppings to your liking.

If you use plain non-fat Greek Yogurt, this is a nice breakfast.
If you instead use Vanilla Frozen Yogurt (non fat and sugar free, if you can find it), it becomes a much richer dessert.
