This Breakfast Casserole from Shane Diet & Fitness Resorts is easy, family friendly, and is ideal for brunch or spa parties, too!

Ingredients

  • 1 cup cauliflower florets
  • 1 cup broccoli florets
  • 1/2 red pepper , sliced
  • 1/2 yellow pepper , sliced
  • 1/2 red onion , chopped
  • 8 oz lean ground turkey
  • 1 tsp extra virgin olive oil
  • 1 garlic cloves , minced
  • 1/8 tsp chili flakes
  • 5 eggs
  • Fine Pink Salt
  • Pepper to taste

Instructions

  • Preheat oven to 350 F.
  • Place cauliflower, broccoli florets, red and yellow pepper and onion on baking sheet lined with parchment paper. Bake at 350 for 15 minutes or until soft.
  • Heat the olive oil over medium heat in a skillet. Add the ground turkey and cook until brown.
  • Add the garlic, chili flakes and season to taste.
  • Mix well with baked veggies.
  • Beat the eggs with salt and ground black pepper.
  • Add meat mixture to a 4×8-inch casserole dish or two oven-safe gratin dishes.
  • Add the eggs and mix well.
  • Place in oven and bake for 30 minutes or until eggs are set in the middle.
  • Let sit for about 5 minutes before serving.
