Combine all ingredients (reserve a few banana slices for garnish) in a blender, and blend just until you form a thick batter. Do not overblend and make too thin.
Heat a non-stick pan, spray lightly with cooking spray.
Spoon out batter in 4 portions, to make 4 pancakes. Griddle until bubbles pop, and flip when golden brown. Cook both sides until brown, and serve immediately.
