A little bit of patience caramelizing onions makes all the difference with this fat-free home fries recipe
Ingredients
3wholerusset potatoes- scrubbed and peeled
1wholeonion- thinly sliced
½smallbell pepper- small dice
½teaspoonpaprika
¼teaspoonblack pepper
½cupwater- and more as needed
Instructions
Cut potatoes into rough cubes or chunks of even size, and team until fork tender (but not crumbling), about 10 minutes. Remove from heat, and set aside to drain and dry (on a towel or a rack).
Heat 1/4 cup of water in a large non-stick skillet, medium high, and add onion. Cook, stirring frequently, until the water has evaporated and onion begins to stick to the pan.
Scrape the pan as you add another 1/4 cup water, and continue to cook until the onion once again begins to stick to the pan. Repeat this process, with patience, adding more water and scraping, until the onion is very brown and sweet. This can take as long as 15 minutes.
When the onion is as brown as you wish, and very soft, add the bell peppers and toss until cooked, but crunchy.
Add potatoes to onion and peppers and sprinkle with paprika and black pepper. Cook, turning over periodically, and gently with a spatula, until the potatoes are golden brown on the side and edges.
Serve immediately.
