Delicious grilled cilantro lime shrimp fresh from your outdoor grill -- or try it with chicken and pineapple
Ingredients
Skewers
16mediumprawns or shrimp- peeled and veins removed
4Wooden skewers- soaked in water
Marinade:
1CupChicken Stock- or vegetable stock
2wholeLimes - juiced and zested (or try lemons)
¼CupCilantro- fresh, chopped finely
1teaspoongarlic- minced
1tablespoonExtra virgin olive oil
½teaspoonSalt
¼teaspoonGround black pepper
¼teaspoonGround red chili pepper
Garnish
½teaspoonsesame seeds
Instructions
Combine marinade ingredients in a bowl.
Thread 4 shrimp or prawns onto each wet skewer (8 shrimp and 2 skewers per person)
Lay skewers in a single layer on a baking sheet or in a glass tray. Brush each skewer liberally with marinade. Reserve extra marinade for serving.
Wrap the tray to cover, and marinade for 15 minutes. Be careful about marinading seafood too long in lime juice -- it will begin to "cook" from the acid.
Remove skewers from marinade, grill skewers on high heat ( or bake) until the shrimp is pink around the edges and no longer translucent.
While skewers are grilling (or baking), heat the reserved, left-over marinade. Serve as a dip for the skewers.
Garnish wish sesame seeds or chopped green onions
