Ingredients
Ginger Bars
1cuprolled oats- gluten-free if needed
1tablespoonginger- fresh, peeled and finely grated
¼teaspooncardamom
1teaspoonbaking powder
1teaspoonsea salt
¼cupcoconut oil- melted
1cupcoconut milk- full-fat
1mediumbanana- ripe or very ripe
2tablespoonsraw honey- local if possible
2largeeggs
2teaspoonspure vanilla extract
Optional Toppings (choose 1)
1wholeberry- per serving
¼cupalmonds- thinly sliced
¼cupoatmeal- dry flakes
¼cupbanana slices- dried
Instructions
Preheat oven to 375 F.
Adds oats to food processor and pulse until smooth (you're using as a flour)
1 cup rolled oats
Add ginger and cardamom to oats and blend again until mixed. Add baking powder and salt and blend again.
