Slice sweet potatoes and steam until tender. Drain, peel and press into a measuring cup to yield 1-1/2 cups.
Combine sweet potatoes with remaining ingredients, EXCEPT the beaten egg whites, and process until smooth.
Fold in beaten egg whites
Make a crust of the crushed gingersnaps and margarine or butter spread, and press into a 9 inch pie pan or springform pan. Pour in prepared filling.
Bake at 400 degress for ten minutes.
Lower oven to 350 degrees and bake an additional 35 minutes until center is set.
Chill before slicing.
