Delicious warm or cold, and served with a swirl of your favorite all-fruit (no sugar added) jam.
Ingredients
4cupswhole wheat bread - hearty and rustic, cut into cubes
¼cupSplenda- granular
2.5cupssoy milk or skim milk
1teaspooncinnamon
2tablespoonsraisins
½teaspoonsnutmeg
1teaspoonvanilla
3wholeegg whites- slightly beaten, but not stiff
Instructions
Soak bread in milk and add spices
Fold in egg whites
Divide between 8 ramekins which have been prepared with cooking spray
Bake at 350 for 25 minutes.

We served this with all-fruit jam, no sugar added, and thinned with a bit of juice. Or, you can puree fresh, ripe berries, as served at Pritikin. Be sure to factor that into your calorie count!
