Hilton Head Health recommends this granola bar as a great mid-afternoon snack or breakfast
Ingredients
¼cupHoney
½cupPeanut butter
1tablespoonCoconut oil
1teaspoonVanilla extract
1scoopVanilla whey protein powder-- at Spa Index, our favorite brand is Unjury
1cupOld fashion oats-- avoid instant
1cupPretzels
1cupAlmonds
½cupRaisins-- or cranberries if you prefer
½cupCoconut- shredded, unsweetened
Instructions
Lightly spray a 9 x 13 baking dish with non-stick spray.
In a small sauce pot combine honey, peanut butter, coconut oil, and vanilla extract. Heat on medium-low heat until the mixture is melted together, stir occasionally to avoid burning.
In a food processor pulse the almonds and pretzels until the mixture is even in size.
In a large bowl combine; almond mixture, oats, protein powder, raisins and coconut, pour in melted peanut butter mixture. Mix until evenly combined.
Pour mixture into the baking dish and let cool.
The granola will firm up best in the refrigerator.
Let cool, and cut into 16 bars.
