This seafood entree comes together quickly and can be as mild or spicy as you like it! High Protein, Low Fat, Low Carb, and Mucho Flavor! Plus, less than 150 calories per serving.
Ingredients
1poundshrimp(about 20) thawed and deveined
1teaspoondark toasted sesame oil
4tablespoonsmedium plum tomatoes(small diced, or, sliced cherry tomatoes if you prefer)
4clovesgarlic(minced)
2wholescallionsc(hopped)
2teaspoonsfresh ginger(peeled and chopped)
1small handfulFresh Basil(chopped)
1-1/2teaspoonscurry paste(see notes)
Freshly ground black pepper
Tamari(to taste)
Instructions
Heat sesame oil in large skillet, saute scallions, garlic, ginger and spices for 2 minutes.
Add shrimp and cook for 2 minutes.
Add tomatoes, basil, pepper and tamari. Cook on medium heat until shrimp are done and tomatoes are heated through.
