A classic fruit dessert, but simply sweetened with maple syrup and just a few tablespoons of cane sugar. Tender apples and sliced berries are topped with oats and pecans.
1/4cupinstant oats(reserved for adding after blending)
1/4cupall purpose flour(white or whole grain)
1/4cup pecans
1tablespoonreduced calorie butter spread
3tablespoonsSplenda Brown Sugar Blend
Instructions
Preheat oven to 350 degrees.
In a 9x9 pan, spray with Pam non-stick cooking spray.
Layer fruit on the bottom of the pan. If you are not using the berries, you may wish to increase the apples by the same amount. Drizzle maple syrup over the fruit. Sprinkle the cinnamon and cane sugar over the rest of the pan.
For the toppings (both versions), in a food processor, add 1/4 cup instant oats, the flour (if using), pecans, butter, cinnamon, and cane sugar. Blend until all lumps are gone and everything is evenly and finely chopped.
Add to a mixing bowl the remaining (reserved) instant oats and mix together by hand (to create a mixture of fine and coarse).
Sprinkle topping mixture over fruit and bake for an hour or until fruit sets up.
Cool for 15 minutes and serve.

Our team much prefers Topping Version 2 -- we added a bit of flour in place of the full amount of oats (we reduced the oats by the amount of flour we added), and this gave us a nicer "crumble" without increasing the calorie count. We also used brown sugar blend, instead of white.We also omit berries if we don't have them on hand --- it's good as an apple crisp as well.
