This sandwich is from Spa Specialties from the Kitchen of the Lake Austin Spa Resort, Texas (additional recipes available on the website), and makes a healthier version of the calorie-laden "Monte Cristo."
Ingredients
2sliceswhole wheat bread
1ozturkey- cooked, sliced very thin
2slicesSwiss cheese
2slicestomato
1egg whites
2tablespoonsskim milk
Pinchcayenne pepper
Dijon mustard
Instructions
On each slice of bread, spread a thin layer of Dijon mustard.
On each slide of bread, layer one slice of skim Swiss Cheese, one slice of tomato, and sliced turkey.
Lift and press the two halves together, with sandwich ingredients in the center, so that the layers are bread, cheese, tomato, turkey, tomato, cheese, bread. Beat the egg white with milk and a pinch of cayenne in a shallow dish.
Dip the sandwich in the egg white and coat both sides.
Brown the sandwiches in a nonstick pan, turning to brown both sides and melt the cheese.
Slice and serve.
Spa Index Kitchen Notes
While this sandwich was made on dark wheat bread, we've also stuffed the ingredients into a small slit in a pita pocket, and proceeded in the same way, grilling the pita, for more calorie savings. For the cheese, we like to use Sargento's Ultra Thin varieties, but you can ask your deli clerk to slice cheese "ultra thin" as well.
