Lake Austin Spa has perfected these recipes for healthy spa Popsicles to include summertime ingredients of fresh herbs, yogurt, fruit, coffee and avocados.
Ingredients
Watermelon Berry
2cupsseeded watermelon, cut into chunks
½cupfresh or frozen strawberries
1tablespoonfresh lemon juice
2tablespoonsrapadura (unrefined cane) sugar, honey or agave nectar (or to taste)
Peppermint or cinnamon basil sprigs
Coffee Pops
1cupstrong coffee
2tablespoonsAgave Nectar (or honey)
1 cuplight milk or light cream or almond milk1% or 2%
Avocado Mint
1largeAvocadovery ripe, cut into chunks
½cuplight cream (half and half)
¼cuplight milk or almond milk1% or 2%
2srigsFresh mint leaves
2tablespoonsAgave Nectar (or honey)
Pina Colada Pops
1cupcrushed pineapple in its own juice
1 cuplow fat coconut milk
2tablespoonsAgave Nectar (or honey)
2tablespoonscoconut shredsunsweetened
2sprigsFresh mint leaves
Mango Lemon
1cuporange juice(or pineapple)
1spriglemon balm or lemon verbena
Instructions
Place all ingredients in the blender and blend until smooth.
Pour into molds and freeze at least 6 hours (but preferably overnight).
Serve and enjoy!
