Make your morning hot cereal anything but ordinary by topping it with this zesty, subtly sweet Mango Compote. It's also a superb dessert. No added sugar, no added fat, but loads of luscious flavor.
Ingredients
Compote
3wholemangoes- peeled and medium-diced or thinly sliced
1pinchcinnamon
2tablespoonsapple juice concentrate- unsweetened, undiluted
2tablespoonswhite wine
1teaspoonvanilla bean paste- or vanilla extract
1pinchnutmeg- fresh ground
1-2pinchescayenne pepper- for a spicy version
Optional Garnishes
½cupraspberries for garnish
1recipecreamy vanilla sauce- See Notes
Instructions
In a large stockpot add all ingredients. Cook over medium heat for 5-7 minutes, stirring constantly.
Cool, portion and serve.

The Chefs at Pritikin serve this compote to guests, cooled, with fresh raspberries, and dotted with creamy vanilla sauce. The sauce is made by combining Vanilla Soymilk (1 cup), Vanilla Extract (1 teaspoon), Fat Free Sour Cream (3/4 cup), and Splenda (1 tablespoon), mixed until creamy, and chilled until serving.
