These tasty fritters can easily be enhanced with protein, chick peas, lentils, cashews and more! Delicious served over a salad, with sliced avocado and white beans.
Ingredients
1mediumCarrot
1smallZucchini
1smallYellow squash
1smallRed onion- minced
2clovesGarlic- minced
1eachEgg
1teaspoonKosher salt
1teaspoonBlack pepper
1teaspoonOregano- dried
½teaspoonCumin
½cupAP Flour
4tablespoonsOlive oil- divided
Instructions
Grate carrot, zucchini, and yellow squash into ribbons with a cheese grater or spiral-cutter directly into a mixing bowl.
Add all ingredients, except for the olive oil, to the bowl and mix thoroughly until well incorporated.
Form the mixture into small patties (using about 2 tablespoons of batter for each).
Add 1/2 of the olive oil to a preheated medium sized skillet -- you'll be adding a bit more oil as you cook the patties and the level goes down.
Place 3-4 patties into oil, cook for 1 - 2 minutes on each side until browned. Remove and set onto a plate and cover with foil to keep warm.
Prepare the rest of the patties until all of the mixture is gone, replenishing the oil in the pan as needed.
