Instructions
YOGURT CHEESE
It is important to use a fresh, quality Greek yogurt with no pectin or other stabilizers, or you will not be able to drain away the whey. FAGE is our favorite brand for this trick.
In the refrigerator, drain a tub of high quality Greek Yogurt overnight (at least 8-10 hours) through muslin or cheesecloth, or in a lined funnel placed in a very large jar, until the whey drips away
The longer you drain away the whey, the thicker the yogurt cheese will be.This thick, spreadable yogurt-cheese is a high protein low fat replacement for cream cheese.
Tip: Save the whey and use it to "dress" dry dog food or cat food. They seem to love it, and it's nutritious for pets and aids in a glossy coat!
MOUSSE
Melt chocolate in a double boiler and combine with yogurt cheese in a bowl. Set aside.
In a separate bowl, combine the egg whites and sugar in a stainless steel, perfectly clean and dry mixing bowl.
Place the bowl of egg whites over simmering water and whip the egg whites for 3 minutes
Remove from the heated water and continue to whip until soft peaks form. Keep the water simmering.
Over a paper plate, sift the cocoa powder twice and add it to the melted chocolate and yogurt mixture.
Add the orange zest and Grand Marnier to the chocolate yogurt. Now place this mixture over the simmering water and whisk and mix until warm, smooth and glossy. Set aside.
Place of the bowl of beaten egg whites over a large bowl of ice water and now fold in the chocolate yogurt mixture, very gently.
Divide this mixture into parfait glasses or ramekins, and chill.
Dust with cocoa, or orange zest, if desired.
