Shrimp and fresh, crispy veggies are dressed with a sweet and sour sauce, and wrapped in whole wheat tortillas
Ingredients
FILLING

cooked shrimp
- peeled, deveined and tails removed

red bell peppers

fresh yellow tomatoes

shredded red cabbage

SWEET & SOUR DRESSING

rice vinegar

sesame oil

red chili flakes

teaspoon
fresh ginger root
- minced

orange marmalade

WRAPS

whole-wheat flour tortillas
- about 10-inches in diameter
OPTIONAL

- bean, clover or alfalfa are all good

Instructions
Chop fulled cooked shrimp into bite-size pieces.
In a large bowl, combine shrimp, peppers, tomatoes, cabbage and onions. Add other optional veggies (avocado, cucumber, carrots, or sprouts) if using.
In a small bowl, combine all ingredients for Sweet and Sour Dressing and blend with a hand-held mixer.
Add 1/4 cup of the dressing to shrimp/vegetable mixture and toss together until well combined.
Place tortilla onto flat surface. Place 1/3 cup shrimp and vegetable mixture on each tortilla. Roll burrito style. Serve immediately.
