This recipe for Strawberry Chiffon is a light and airy mousse with fresh berries and yogurt and just 90 calories per serving.
Ingredients
1pintFresh Strawberries(cleaned and hulled)
½cupapple juice concentrate(unsweetened, frozen and thawed)
½cupwater
1tablespoonGreek yogurt(non fat, plain)
¼teaspoonorange extract
¼teaspoonalmond extract
¼cupegg whites(stiffly beaten)
6wholestrawberries(for garnish)
Instructions
In a blender, chop, but do not puree, the pint of strawberries. Set aside.
Bring apple juice concentrate plus 1/2 cup water to a boil. Dissolve gelatin in the 1/2 cup cold water and add it to the hot juice mixture. Let cool slightly, then stir in yogurt, extracts, and chopped berries. Chill until almost set.
Beat egg whites until stiff, and fold into chilled strawberry mixture.
Divide between six dessert glasses. Chill for several hours.
Garnish each serving with fresh berries, and a dollop of yogurt if desired.
