With summer cookouts and picnics all around you, this is a great time to make over your traditional potato salad. Our Healthy Kitchen Loaded Baked Potato Salad is a healthy alternative that is packed with flavor (and bacon!). Enjoy this tasty side at your next gathering.
Ingredients
Salad
1lbIdaho potatoes- quartered
3tablespoonsBacon- cooked and chopped (consider using Turkey Bacon)
4ozReduced-fat Cheddar Cheese- shredded
¼cupGreen onions- chopped
4ozH3 Sour Cream Substitute- see below
2eggs- hardcooked, peeled, and minced - optional
1-2smallgherkin pickles- chopped - optional
H3 Sour Cream Substitute
½cupCottage cheese- 1 % fat, pureed smooth
¼teaspoonlemon juice
Instructions
Bring a large pot of water to a boil.
Add potatoes, allow potatoes to cook until fork tender, about 10 minutes.
Remove cooked potatoes from water and transfer to a large bowl. Allow the potatoes to cool in the refrigerator for about 20 minutes.
Prepare H3 Sour Cream by combining cottage cheese and lemon juice into a food processor and blend until very smooth.
In a separate bowl combine H3 Sour Cream, green onion, salt, chopped bacon, and reduced-fat cheddar cheese -- plus chopped hard cooked eggs and pickles,, if using.
Once the potatoes have cooled toss them in the sour cream mixture.
Keep cold until serving.

A serving size is 1/2 cup. Optional: Finely mince a fully cooked hard egg or two, for a bit of extra color and flavor. Be sure to factor in the calorie addition. This recipe was calculated used regular pork bacon, but consider using your favorite brand of turkey bacon for even less fat and calories.
