In this Carrot and Pineapple Salad, always a hit in Pritikin's dining room, the tart lime juice balances beautifully with the sweet pineapple. Each 1-cup serving is just 65 calories.
Ingredients
Base Salad
2wholecarrots- shredded or finely chopped
½wholepineapple- peeled, cored, and diced
2wholelimes- juiced
1tablespoonGreek yogurt- unsweetened, non-fat
Optional
1tablespoonbasil- fresh, cut into thin strips
1tablespoonFresh mint leaves- fresh, cut into thin strips
1tablespoonchives- fresh, chopped or snipped
¼teaspoonblack peppercorns- freshly ground
Instructions
In a large bowl, combine and mix all ingredients well.
Let sit for 10 minutes. The lime juice will macerate with the fruit and yogurt, creating a light and loose "dressing."
Chill. Serve cold.
