Be creative! Feel free to forge new fusions. Do you prefer balsamic over red wine vinegar? Go for it! Did you just pick up some juicy blackberries, peaches, clementines or oranges from the market? Use them instead of strawberries for this salad. Remember Pritikin Chef Anthony’s mantra: "If you like foods individually, chances are you will love them when they’re combined." It’s all about discovering new taste treats!
Ingredients
Salad Base
2bunchesFresh Asparagus
2smalltomatoes-optional, quartered or sliced
2smallcarrots-optional, cleaned and sliced
1cupstrawberries-cleaned and sliced
1bunchshredded romaine-optional -- this salad is delicious without lettuce, too. We also love it with raw spinach leaves.
4pinchesfresh herbs or microgreens
Dressing
½cupred wine vinegar
½cuporange juice
1tablespoongarlic freshminced
1teaspoonpaprika
1teaspoonblack pepper fresh ground
Instructions
For dressing, combine all dressing ingredients and whisk.
Remove tough asparagus ends, cut on the diagonal into 1-inch pieces, and blanch. Put asparagus, tomatoes or carrots, strawberries or other fruit, and romaine in large bowl. Toss gently with dressing, top with a pinch of microgreens for each serving, and serve.
