A perfectly light and refreshing little sandwich, best served in warm weather for lunch, or in small pieces for your spa party appetizers.
Ingredients
1wholeEnglish Cucumber(peeled)
4ouncesTJ's Wild Smoked Salmon(cut into small rectangular pieces)
4ouncesWhipped Cream Cheese
½wholeLemon(juiced)
⅛teaspoonTJ’s Spices of the World Dill(or use Dried Dill)
Instructions
For longish sandwiches (see notes), cut peeled cucumber into thirds. Slice each third lengthwise to create long, thin cucumber slices. Pat dry.
Combine cream cheese, lemon juice and dill in a bowl and mix thoroughly. Spread cream cheese mixture over cucumber slices.
Place a piece of salmon on a cucumber slice and top with another cucumber slice to create a sandwich. Dust with Dill.
Serve chilled.

This recipe and the image shows the sandwich in longish pieces, perfect to serve a few to each person. However, for bite-sized appetizers, simply cut your cucumbers into traditional rounds, and then proceed with tidbits of salmon and a dollop of the cream cheese mixture.
