Light and delicious, this dish is the perfect balance of sweet and leafy. It really amps up the flavor of store-bought tomatoes, and if you are lucky enough to have home-grown, it's even better!
Ingredients
2cupsgrape, cherry or plum tomatoes(chopped into large chunks)
1tablespoongarlic(chopped0
½cupPritikin Balsamic Horseradish Dressing
1tablespoonoregano(chopped0
3bunches chard(fresh cleaned and chopped)
1basil(fresh)
Instructions
Cut tomatoes into large pieces and place in a bowl with garlic, oregano and balsamic dressing. You can also chunk up 2 large tomatoes, if you prefer.
Toss together and then pour onto a baking sheet and bake at 350 degrees for 20 minutes.
Drain and cool (this step can be done a few days in advance).
In a large pot sauté onion and chard, add the pre-roasted tomatoes and fresh basil and sauté for 5 minutes.
Serve as a side dish or warm salad.
