This simple but hearty sandwich features a tasty chickpea salad, created by Hilton Head Health's own Executive Chef, Karla Williams. It's just as delicious served atop a spinach salad!
Ingredients
15ounceschickpeas, drained and crushed
½wholeRed Onion, diced
3tablespoonsFresh Basil, minced
½wholeRed apple, diced
½wholeTomato, diced
½wholeGreen Pepper, diced
2wholeGreen onions, diced
½cupNatural applesauce (no sugar added)
2tablesoonsFresh lemon juice
1tablespoonExtra Virgin Olive Oil
5tablespoonsNutritional Yeast
2ouncesGruyere cheese, sliced thin
Instructions
In a medium bowl combine chickpeas, red onion, basil, apple, tomato, green pepper and green onion. Mix well.
In a separate small bowl, combine applesauce, lemon juice, olive oil and nutritional yeast. Mix well.
Combine the two bowls and mix well.
Scoop a half cup of the chickpea salad on your choice of either toasted rye bread or freshly chopped salad and spinach greens. Top with 1/4 ounce of Gruyere cheese. Enjoy!
