In honor of ANZAC day (April 25) Golden Door Spa in Australia created their version of these popular cookies for you to enjoy. This quick and easy recipe is the perfect alternative to the sweet traditional biscuit you may already know and love.
Ingredients
Ingredients:
1-1/2cupsoats(rolled, old fashioned)
¼cupslivered almonds
¼cupalmond meal
4tablespoonsVermont maple syrup
3tablespoonscoconut oil or coconut butter
1tablespoonmesquite powderoptional
½cuproasted and mashed pumpkin
1.5teaspooncinnamon
2teaspoonsvanilla
2teaspoonspumpkin seedsoptional
Instructions
Combine all ingredients in baking bowl. Then with wet hands form into cookies and bake in preheated oven at 325 degrees or 160°C for 10 mins or until golden.
Allow to cool and set firm, before serving or storing.

These biscuits are full of vitamins and minerals, contain high levels of dietary fibre, healthy macronutrients and beta-glucan which has been linked to lowering blood LDL cholesterol or ‘bad cholesterol’.The Mesquite powder is optional. It's a unique sweetener which doesn’t cause sugar spikes and is rich in minerals: calcium, iron, zinc, and potassium. If you opt out of using it, just taste your batter and adjust your sweetener to taste.
