Ingredients
3cupsGluten Free Almond Flour
1/2teaspoonbaking soda
1/4teaspoonSea Salt
1teaspoonground cinnamon
1/2teaspoonground cardamom
1.5cupsfresh blueberries- fresh or frozen
1/2teaspoonpure vanilla extract
1/2cuphoney or agave nectar
3wholeeggs
Olive Oil (or similiar) Cooking Spray
Instructions
Heat oven to 325 degrees
Line a muffin tin with paper baking cups, and, spray those baking cups with cooking spray
Combine almond flour, baking soda, salt, spices, and mix together in a bowl.
Combine vanilla, honey or agave, and eggs, in a second bowl. Blend with a whisk, thoroughly. Stir in blueberries, fresh or frozen, and mix, but try to keep them from breaking too much.
Now mix your wet and dry ingredients together, gently.
Evenly fill each baking cup with batter.
Bake 18-20 minutes. Remove and let cool.
