A simple treat, appealing to young and old, and less than 150 calories each
Ingredients
1cupricotta cheese - skim or low fat
1tablespoonAgave Nectar (or honey)
1tablespooncocoa- preferred 70% natural dark
1handfuldark chocolate chunks- coarsely chopped
1-2dropsAmaretto Flavoring- optional
4Sugar Cones- naturally sweetened (recommend "Let's Do Organic" brand)
Instructions
Using a whisk, mix the ricotta, agave, amaretto (if using) and 1/2 tablespoon of the chocolate until well combined. Cover this mixture and chill it for at least an hour to allow the filling to meld flavors and chill.
Divide the ricotta mixture evenly among four cones (1/4 cup each).
Sprinkle the remaining chocolate pieces evenly over the cones.
