This light and refreshing Watermelon Lemonade quencher is perfect for warm summer afternoons by the pool or in the garden, or after a long walk and a jog. Plus, it's full of Vitamins A and C.
Ingredients
7cupscut-up watermelon cubesseeded
½cupfresh lemon juiceor use 1 cup of either juice
½cupfresh lime juiceor use 1 cup of either juice
1cupSplenda Granulated SweetenerGranular or 24 SPLENDA® No Calorie Sweetener, Packets
Instructions
PROCESS watermelon cubes in a food processor, in batches if necessary, until smooth.
Press mixture through a sieve into a pitcher; discard solids. You should have about 3 cups watermelon juice.
ADD the lemon juice and SPLENDA® Granular or SPLENDA® Packets, stirring until SPLENDA® dissolves.
Serve over ice. Garnish with Lemons or Limes.

A great "light mocktail" is to add half of this mixture as a base, and then top it off with club soda for a bit of a fizzy lemonade. Also very good with a salted rim -- trust us.
