The Grand Wailea Resort and Spa in Maui offers a legendary menu of Pacific Rim cuisine. This dressing is served with its Ahi Tuna entrees, but it melds nicely with any lighter-fare seafood salad.
Ingredients
1inchfresh ginger- peeled, or 2 teaspoons ginger juice
Grate the ginger into a piece of cheesecloth and twist to squeeze out 2 teaspoons of juice, or, use bottled unsweetened ginger juice.
In a small bowl, whisk the ginger juice and all remaining ingredients together until blended.
Store in an airtight bottle in the fridge for up to 3 days.
Use 1 Tablespoon Per Serving to Drizzle

If you have access to bottled ginger juice, by all means use it -- we love Ginger People juice, available in specialty markets, usually in the Asian foods aisle. Thai chili sauce can be found in the same aisle. This recipe makes approximately 1 cup of dressing, with only a little bit needed to drizzle over entrees and salads.
