This seafood entree has a great balance of protein to fat and carbs, and has rich and satisfying flavor profile.
Ingredients
For Meatballs

salmon filet
, skin removed

scallions
, thinly sliced

cilantro leaves
, rough chopped

garlic cloves
, minced

teaspoon
curry powder
▢

teaspoon
sesame oil

Sea Salt and Ground Pepper
For the Coconut Sauce
▢

lite coconut milk
▢

teaspoon
curry powder
▢

honey
▢

tablespoon
sriracha hot sauce

teaspoon
fresh ginger

Instructions
For the meatballs
Preheat oven to 375 degrees. Line a baking sheet with parchment paper.
Rough chop salmon in food processor.
Combine all remaining ingredients in a bowl, and then add salmon and mix until just combined.
Make into 12 - 15 meatballs (1 ounce each) and arrange on prepared baking sheet.
Bake for 12 minutes.
For the sauce
In a small saucepan, combine all ingredients and bring to a gentle boil.
Spoon sauce over meatballs to serve.

You can easily use canned salmon which is formed into meatballs, or, ask your butcher to grind salmon for you.
