This Carrot Ginger Soup is a guest favorite meal at Sanivan Holistic Retreat in the Catskills of New York. Almost all of the produce is grown in the Inn’s own organic gardens. Organic meals with fruits, juices, produce and cleansing tonics are a specialty.
Ingredients
2tablespoonscoconut oil
1mediumonion(chopped)
2clovesfresh garlic
7mediumcarrots(diced) (if organic no need to peel - just wash well)
In a saucepan over medium heat, heat the coconut oil, add the chopped onion and the garlic, sauté for 4 to 5 minutes, until translucent.
Add the carrots, ginger, salt and broth and bring the mixture to a boil.
Reduce the heat to low and simmer for 15 to 20 minutes, until the carrots are tender.
Add coconut milk to the mixture and puree with a stick blender until creamy and smooth.
Serve, topped with freshly chopped herbs and freshly ground black pepper
